The Chinese and their Greens (11/12)
Ah the green bean...why so many people cringe at the idea of having to eat this delectable vegetable either ate them out of a jar or cooked until mush while growing up. This vegan dish boasts a tremendously savoury flavour thanks to a preserved vegetable called olive vegetable. It is ready found in wet markets across town and in most supermarkets. It is a condiment many (especially Chiu Chow people) enjoy with a bowl of plain white congee but when used in stir-fry will make even bland, boring ingredients explode with taste. All it takes is everything you see below plus a couple of pinches of salt if required.
Give this preserved olive vegetable a try and you will have a new, distinct flavour for your stir-fried dishes, congee and fried rice!
